Ingredients and Directions:
- scrub potatoes with paper towel to remove dirt
- cut potatoes into finger-size strips - rinse strips in sink to thoroughly remove starch (4-5 times with 5 min rest in between) - once done pat completely dry - heat 1.5 inch of canola or vegetable oil in skillet - blanche potatoes until lightly golden - remove and place on paper towel to dry - once dry, put back in oil at higher heat for 3-5 minutes or until golden brown - remove and serve

- ketchup and tobasco
Garlic aioli sauce (mix to liking)
- mayo
- minced garlic - lemon - salt and pepper - cayenne
Animal Style (mix to liking)
- mayo - ketchup - lemon juice - cappers - dill - cornichons - salt and pepper
