Cristina's Arugula Salad


  • 5 tablespoons olive oil
  • 1/2 cup lemon juice
  • 1 teaspoon cumin
  • 1 garlic clove, smashed
  • 4 cups arugula
  • 1/2 cup cilantro, chopped
  • 1/4 cup fresh basil, chopped
  • 1/4 cup torn mint leaves
  • 2 tablespoons chopped Italian parsley
  • 1 cup shaved Parmesan curls

Make the Dressing
• In a bowl, whisk together 4 tablespoons of olive oil, the lemon juice, cumin, salt, pepper, and garlic. Set aside.
• Place the arugula, cilantro, basil, mint, and parsley in a salad bowl. Set aside. •Remove and discard the garlic from the dressing, and pour the dressing over the salad. Mix well.
