Chocolate Protein Muffins, Coconut Freezer Cookies and Energy Bites
Nutritionist Alexandra Catalano is making some delicious muffins and cookies that also have health benefits.
Ingredients

Ingredients for Muffins

  • 1 Banana
  • 1 egg
  • 1 scoop of unsweetened chocolate protein powder
  • 1 tsp of Baking powder
  • 1 tsp Baking Soda
  • 1/2 tsp of Cinnamon
  • 3/4 cup of almond flour
  • 1/2 cup of coconut yogurt
  • 1 tablespoon of raw cacao powder
  • * You can add fruit like blueberries, or strawberries in the batter for added sweetness!

Ingredients for Coconut Cookies

  • 1/4 cup of unsweetened coconut milk
  • 3 tablespoons of ghee
  • 1 tablespoon of maple syrup or a few drops of monk fruit extract
  • 1/2 tablespoon of vanilla extract
  • 2 cups of unsweetened coconut flakes
  • 1/2 cup of chopped pecans and walnuts

Ingredients for Energy Bites

  • 3 medjool Dates
  • 1 cup of shredded coconut flakes unsweetened
  • 4 tablespoons of coconut butter
  • 4 tablespoons of coconut oil
  • 1/2 cup of raw cashews  
  • 1/2 cup of walnuts
  • 1/4 cup of almond milk or ( hemp, cashew)
  • 1 tablespoon of raw cacao powder
  • 1 tablespoon of cinnamon

Directions for Muffins

Preheat the oven to 350. All all the ingredients to a food processor and mix till smooth. Grease the muffin tin with coconut oil. Place batter into each tin. Bake for 11-15 minutes or until the tooth comes out clean.

Directions for Cookies

In a medium pot add coconut milk, ghee, maple syrup, cacao and vanilla and bring to a boil for 2 minutes. Then remove from heat. Add coconut flakes and nuts and stir until coated with chocolate. On a sheet of parchment paper lined baking sheet, scoop large spoonfuls onto the sheet. Let cool for 30 minutes. Place in freezer and enjoy when you need something sweet!

Directions for Bars

In a food processor mix all the ingredients until dough begins to form. Wet hands and roll into balls. When hands are slightly damp they are easier to roll. Place every bites into a container and freeze. When ready to eat remove from freezer for 5-7 minutes until soft and chewy!
