Brad Miller's simple and easy recipe for a One-Pot Oven Roasted Halibut with Spiced Sweet Pepper Sauce And Lemon Sour Cream.

One-Pot Oven-Roasted Halibut - Home & Family
INGREDIENTS:
  • 3 red bell peppers, preferably red and yellow
  • 1/4 cup extra virgin olive oil
  • 1 medium onion, thinly sliced
  • 4 cloves garlic (sliced thin
  • ½ cup cherry tomatoes halved
  • 2 tsp capers
  • 1/2 teaspoons piment d’Espelette
  • salt to taste
  • ½ tablespoon chopped basil
  • mini basil leaves for garnish
  • 4 pieces 4-5oz Alaskan halibut
  • ¼ cup white wine

Lemon Sour Cream:

  • ½ Cup sour cream
  • ¼ lemon juiced (seeds removed)

DIRECTIONS:

  • In a large skillet or cast-iron pan heat oil until hot.
  • Toss in your peppers and begin to sauté. Then add in your garlic and onion and sweat.
  • Put in the rest of the ingredients (except for lemon sour cream and garnishing basil) and bring to a simmer.
  • Once simmering place the pan in a 375-degree oven fitted with a lid for 30-45 minutes (depending on thickness of fish).
  • Once fish is cooked through serve hot with a dollop of cold lemon sour cream on each piece of fish and garnish with basil leaves.

Lemon Sour Cream:

  • Combine all ingredients and whisk together
