Ingredients:
- ½ cup corn kernels (2.75 oz popped)
- 6 oz corn syrup
- 6 oz butter
- 12 oz sugar
- 1 t salt
- 2 t vanilla
- 1 t baking soda
- 14 oz (about 8 cookies) Birthday Cake Cookie crumbs
- 1 cup rainbow sprinkles
Directions:
1) pop corn in air popper, shake out unpopped kernels and pour into large mixing bowl
2) in a pot, melt butter over medium heat
3) add sugar, corn syrup, and salt; raise heat to medium-high; let boil until about 250 degrees
4) take off heat, add vanilla and baking soda – mix well
5) pour caramel over popcorn, stir to coat (careful not to break corn)
6) fold in crumbs
7) mix in ½ cup sprinkles
8) pour onto large sheet pan
9) bake at 250 (low fan, if convection) for about 1 hour, rotating/turning every 15 minutes
10) sprinkle with remaining ½ cup sprinkles
11) let cool, pack in tubes
