Banana Whoopie Pies with Peanut Butter Filling

Owner of "Sheila Mae," Danielle Keene is making a sweet dessert with homemade filling.
Ingredients for Cookies
  • 2 cups All Purpose Flour
  • ½ tsp. Baking Powder
  • ½ tsp. Baking Soda
  • ½ mashed, ripe banana
  • ½ cup buttermilk
  • 4 oz. butter
  • ½ cup sugar
  • ½ cup brown sugar
  • 1 egg
  • 1 tsp. vanilla
Ingredients for Peanut Butter Filling
  • 2 oz. Unsalted Butter
  • 1 cup Powdered Sugar
  • 4 oz. Cream Cheese
  • ½ cup Unsalted Creamy Peanut Butter
  • ½ tsp. Vanilla Extract
  • ½ tsp. Salt

Instructions for Cookies

1. Sift together flour, baking powder, and baking soda
2. Combine mashed banana and buttermilk
3. In stand mixer, cream together butter, sugar, brown sugar
4. Add egg and vanilla
5. Mix all together until combines
6. Pipe rounds onto parchment lined baking sheets
7. Bake for 15-18 minutes at 350F, until golden brown

Instruction for Peanut Butter Filling
1. Cream butter and powdered sugar together for 3 minutes, until creamy
2. Add cream cheese and mix until combines
3. Add remaining ingredients and mix until combined
4. Pipe peanut butter filing on backside of half of the cookies and sandwich together with remaining cookies
