Ingredients for Angel Food Cake
- 1 cup cake flour
- 1 cup powdered sugar
- 1/2 tsp ground ginger
- 3/4 cup granulated sugar
- 12 egg whites
- 1 tsp cream of tartar
- 1/2 tsp salt
- 2 tsp fresh orange juice
Ingredients for Filling
- Raspberries
- Blackberries
- ¼ cup sugar
- 2 tbs fresh orange juice
- Whipped cream
Ingredients for Coulis
- 2 qts fresh strawberries (hulled, washed and sliced)
- 1 cup fresh orange juice
- 1 cup sugar
- 1 tbs cornstarch
- ¼ cup water
Directions for Angel Food Cake
1) Preheat oven to 375°
2) Sift flour, ½ powdered sugar and ginger in a med. bowl
3) Sift remaining powdered sugar and ¾ c granulated sugar in a separate bowl
4) Place egg whites in large bowl, beat until foam
5) Add cream of tartar and salt
6) Beat until soft peaks form.
7) Add powdered sugar and granulated sugar mix
Directions for Filling the Angel Food Cake
1) Combine berries and sugar
2) Cover and chill for 1 hr
3) Cut off 1 inch off top of cake using serrated knife
4) Set top of cake aside
5) Hollow out bottom of cake using a small knife
6) Leave 1 inch thick shell
7) Invert cake onto plate
8) Spoon all but 1 cup berry mixture into shell
9) Add whipped cream on top
10) Cover with top of cake
11) Sprinkle with powdered sugar and serve
Directions for Coulis
1) In sauce pan, combine sliced strawberries, orange juice and sugar
2) Bring to boil
3) Continue until sugar has melted (about 5 min)
4) Strain through a wire mesh into a saucepan
5) Mix cornstarch and water until smooth
6) Heat strained strawberries over medium heat
7) Add cornstarch mixture
8) Stir until slightly thickened
9) Remove and let cool
10) Place in fridge to chill
*tip: before placing the cornstarch into the saucepan, mix with 2 tsp of water to avoid your coulis becoming lumpy.
