Seared Scallops
Chef Brian Malarkey of Herringbone Restaurant is in the kitchen preparing a seafood favorite, seared scallops with ancient grain “risotto.” Instead of actual risotto, he is making farrotto, which is created by adding chicken stock and parmesan cheese to cooked farro.
