Cristina Cooks: Scrumptious California Salmon
  • 3 garlic cloves, minced
  • 1 teaspoon minced shallot
  • 1 cup orange juice
  • 1 tablespoon balsamic vinegar
  • 3 tablespoons honey
  • 1 tablespoon ground ancho chili pepper
  • ¼ teaspoon salt
  • ⅛ teaspoon pepper
  • 1 salmon fillet (1 pound)
  • 2 teaspoons canola oil
  • 2 tablespoons minced fresh cilantro

Prep: 35 min. Bake: 10 min. Recipe:

  1. In a small saucepan coated with cooking spray, saute garlic and shallot until tender.
  2. Add orange juice and vinegar and bring to a boil.
  3. Reduce heat; simmer, uncovered, for 20-25 minutes or until reduced to ¼ cup.
  4. Stir in the honey, chili pepper, salt and pepper.
  5. In a large ovenproof skillet, brown salmon in oil on both sides.
  6. Brush with ¼ cup sauce.
  7. Bake, uncovered, at 400° for 8-10 minutes or until fish flakes easily with a fork.
  8. Brush with remaining sauce and sprinkle with cilantro.
