Nectarine-Topped Lemon Cream Pie
The custard for this pie filling has only one egg, making it significantly lower in cholesterol than a typical custard. If you want to cut the cholesterol in this recipe even further, use olive oil instead of melted butter in the crust and use 1% instead of whole milk in the custard.

Mocha Pudding Cake
The flavors in this pudding cake are deep and rich, thanks to the dark brown sugar, cocoa, cinnamon and espresso powder. We thought this was a good opportunity to sneak in some whole-wheat flour for health reasons, figuring that any "wheaty" flavor would go unnoticed. However, if you don’t happen to have any whole wheat flour around, just use all-purpose white flour.

Wine-Braised Chicken & Vegetables
Leeks can be very sandy, but if you’re cutting them into pieces (as for this recipe), then you can wash them after you cut them instead of before. Fill a large bowl or the sink with lukewarm water. Slice the leeks, put them in the water and swish the leeks around. The sand will fall to the bottom and the leeks will float on top. Use a small strainer or a slotted spoon to scoop the leeks out.
Dilled Salmon Cakes
If you would prefer the taste of the salmon to dominate in these salmon cakes, cut the amount of relish, dill and scallions in half. You could also take some relish, dill and/or scallions and stir them into reduced-fat sour cream for a quick sauce to go with the salmon cakes.
Green Bean & Squash Sauté
Snap peas can be substituted for the green beans. If you can’t find shallots, substitute half of a small sweet onion, diced.

If you have access to a farmers’ market, make this roasted potato dish with fingerling potatoes.
Spicy Chicken, Tomato & Garlic Soup
You could certainly make this soup with chicken breast, but thighs have much more chicken flavor. And if you really like spicy food, then increase the cayenne and jalapeno, as this soup is sort of middle-of-the-road spicy.
Chickpea Salad with Creamy Basil Dressing
If you’d like to add some more protein to this fairly low-cal, meatless main course, try canned solid white tuna. It should work well with the other flavors here.
Shiitake Spinach Frittata
We’ve reduced the fat and cholesterol in this frittata by substituting some egg whites for some of the whole eggs. If you’d rather use egg substitute for the whole frittata, check the container and use the equivalent of 8 whole eggs.
Strawberry-Stuffed French Toast
The best bread to use for these French toasts is the typical supermarket loaf, because the slices are rectangular (not square), which makes it easier to fold the bread. It’s best to serve these toasts as you make them, because if they sit, the strawberries will start to make the bread soggy. So make a first batch, and then when people are ready for a second toast, make the second batch.
