Broiled Bananas with Honey-Rum Cream
These easy broiled bananas would make a good dessert or a brunch dish. For the record, using Greek yogurt in place of the perhaps more expected sour cream represents a savings of 23 calories and over 2 grams of fat per serving. And if you want to cut the fat even more, you can use one of the lower-fat versions of Greek yogurt (1%, 2% or nonfat).

2 tablespoons frozen orange juice concentrate
1/4 cup dark rum
6 large bananas, peeled and halved crosswise and lengthwise
1 container (7 ounces) Greek yogurt
1/4 cup honey
1/4 teaspoon cinnamon or nutmeg
1/4 cup chopped roasted pistachios or almonds
1.Preheat the broiler. Spray a broiler pan with cooking spray.
2.In a medium bowl, mix 1 tablespoon of the orange juice concentrate and 2 tablespoons of the rum. Add the bananas and toss very gently to coat. Place the bananas on the broiler pan and broil 6 inches from the heat for 4 to 6 minutes, or until they are lightly browned and hot.
3.Meanwhile, in a small bowl, combine the remaining 2 tablespoons rum, 1 tablespoon orange juice concentrate, the yogurt, honey and cinnamon. Serve the broiled bananas with a dollop of the honey-rum cream and a sprinkling of chopped nuts.
