Dean Cain's Chicken Nuggets
2 Boneless, Skinless Chicken Breasts
2 Large Grade A Eggs
1 Cup of Bread Crumbs
1/4 Cup of Parmesan Cheese
Salt to taste
Pepper to taste
Malibu Gourmet Chicken Seasoning
Coconut Oil for cooking
Heat enough coconut oil in a frying pan to submerge the nuggets.
Cut chicken breasts into 1 inch by 1 inch pieces.
In a bowl, beat the eggs.
Combine bread crumbs, parmesan cheese, salt, pepper, cayenne pepper, Malibu Gourmet Chicken Seasoning in a large mixing bowl. Stir to mix.
Dip each piece into the egg.
Roll each piece in the seasoned bread crumbs.
With a fork or spoon, move the breaded chicken to the hot oil.
Cook for 10-12 minutes, turning to brown evenly.
Serve with any desired dipping sauce, such as barbecue sauce, ranch dressing or ketchup.
