Buca Di Beppo's Chicken Parmigiana

























Ingredients:
  • 3 Tbsp. olive oil
  • ½ cup flour
  • 2 each egg
  • 1 cup breadcrumbs
  • 4 each chicken breasts, boneless
  • 2 cups marinara sauce
  • 1 ⅓ cup Mozzarella cheese, shredded
  • 2 Tbsp. parsley, chopped


Cooking Procedures:
  1. Pre-heat oven to 400° F.

  2. Lay chicken breasts skin-side down on a piece of plastic wrap.

  3. Cover the chicken with plastic wrap.

  4. Lightly pound the chicken with the fine side of a meat tenderizer till it's approximately ¼" thick.

  5. Heat oil in a large sauté pan.

  6. Dredge chicken in flour, then egg, and next the breadcrumbs.

  7. Place chicken in hot oil and cook until lightly browned.

  8. Turn chicken over and lightly brown other side.

  9. Transfer chicken to an oven-safe pan. Spread 1 cup marinara over chicken and top each piece with mozzarella cheese. 

  10. Bake in oven for 8–10 minutes or until chicken reaches an internal temperature of 165° F.

  11. Remove chicken from oven.

  12. Ladle remaining marinara sauce on serving platter.

  13. Place chicken on top of marinara and sprinkle parsley over top.

  14. Serve and Enjoy!
