Sean Kanan's Couscous
Prep Time: 20 Minutes
2 cups couscous
½ teaspoon ground cinnamon
1 cup water
1 shallot minced
1 cup low sodium chicken broth
1 clove garlic, minced
½ cup loosely packed mint leaves, chopped
¼ cup finely chopped red onion
½ cup loosely packed parsley leaves
¼ cup dried fruit (raisins, cherries, figs etc.)
1 teaspoon cumin seeds
½ cup of small green olives with pimentos
Pinch of fresh lemon zest
1 cup garbanzo beans rinsed
Salt & Pepper to taste
1 tbsp. unsalted butter
½ tsp. lemon zest
1. In a medium sauce pan bring chicken broth and water to a boil.
2. Pour in couscous stirring for about thirty seconds.
3. Turn off heat. Add the Garbanzo beans, olives, dried fruit, mint, parsley, red onion, shallot, garlic, lemon zest, cumin seeds, ground cinnamon, nutmeg, salt, and pepper, mix together with a fork.
4. Cover sauce pan and allow to stand between 5-7 minutes until liquid has evaporated.
Fluff with a fork. Add one tbsp. of butter.
