Peanut Kale Salad
1 large bunch kale, leaves removed from stems and torn
1/4 cup roasted unsalted peanuts, chopped
1/4 red onion, thinly sliced
1/4 cup cilantro leaves
1 sweet-tart apple, thinly sliced (Fuji or Braeburn are both great)
1/2 cup peanut butter
1 Tbsp sugar or honey
2 Tbsp low sodium soy sauce
2 Tbsp rice vinegar
1 clove garlic, minced
1 Tbsp fresh ginger, minced
1 tsp ground cumin
pinch cayenne pepper (or to taste)
kosher or freshly ground sea salt to taste
1/2 cup warm water
1. Place kale, peanuts, onion and cilantro in a large serving bowl.
2. In a separate microwave safe bowl, combine all dressing ingredients.
3. Microwave on high for 45 seconds and stir to combine. If peanut butter seems too thick or dressing isn't coming together, microwave for another 15 seconds and stir.
4. Toss hot dressing with kale and refrigerate until ready to serve. Just before serving, toss in sliced apple.
