Chicken Fricassee























 

Serves 8

Ingredients
2 2lb. chickens
3 cloves garlic
1 sour orange
1 green pepper
1 large onion
1 can tomato sauce
1/3 cup oil
½ cup capers
2 tsp. salt
¼ tsp. pepper
1 cup dry wine
1 lb. potatoes

Directions
1. Cut chicken into quarters and cover with crushed garlic, sour orange juice and onion and green pepper rings.

2. Brown chicken quarters in hot oil, add the onion, green pepper and orange juice and then the tomato sauce, capers, wine, water, salt and pepper.

3. When this is half cooked, add the potatoes and finish cooking.

4. Just before serving, petis pois may be added if desired.
