PALETA Roasted Brussels Sprouts with Apples

1 large diced apple (we like fuji or gala for their tartness)
1 lb Brussels sprouts, trimmed and halved
2 shallots, peeled and sliced
4 tablespoons apple cider
1 tablespoon olive oil
2 teaspoons fresh thyme
1/2 teaspoon salt
1/4 teaspoon freshly ground black pepper
1. Preheat oven to 375°.

2. Toss all ingredients with olive oil.
3. Place on a sheet pan.
4. Bake at 375° for 25 minutes or until sprouts are tender.
