Slice the zucchini into 1/4-inch slices. Spray a skillet with spray olive oil and heat over medium-high heat. Add the zucchini, and sprinkle with Italian seasoning, salt, and pepper. Sauté about 2 minutes, then flip. Top each slice with a spoonful of sauce, and a sprinkle of cheese. Reduce heat and cover for 2 more minutes.
