Winter Chop Salad with Citrus Poppy Seed Dressing
Ingredients: (serves 12)
  • 5 heads of romaine hearts chopped
  • 3 honey crisp apples cut into1/4 inch squares (store in lemon water to keep from turning)
  • 3 kohlrabi cut into ¼ inch squares (store in lemon water to keep from turning )
  • 3 cups raw whole cashews
  • 3 cups of dried bing cherries
Ingredients for Dressing:
  • 2 ½ cups sugar
  • 2 Tbl agave
  • 3 cups lemon juice
  • 1 cup orange juice
  • 1 ½ Tbl Dijon mustard
  • 2 Tbl chopped shallots
  • 3 Tbl poppy seeds
  • 4 cups blended oil
  • Salt and pepper to taste

Crossroads Restaurant's Scot Jones is preparing a delicious vegan salad with an extra crunch.

Directions:

1. Add sugar to lemon juice and let dissolve

2. After the sugar has dissolved in the lemon juice add all ingredients together except the blended oil and poppy seeds

3. Add oil slowly and season with salt and pepper
