Turmeric and Red Beet Couscous with Shaved Vegetables and Greens

Ingredients for Beet Couscous
  • 3/4 cup water
  • 1/2 teaspoon salt
  • 1 chamomile tea bag
  • 2 tablespoons of medium diced red beet
  • 1/2 cup couscous (3 oz)
Ingredients for Turmeric Couscous
  • 2/3 cup water
  • 1 teaspoon granulated garlic
  • 1 teaspoon ground turmeric
  • 1/2 teaspoon salt
  • 1 tablespoon olive oil
  • 1/2 cup couscous (3 oz)

Directions for Beet Couscous

Bring water and salt to a boil in a 1-quart heavy saucepan. Turn off the heat and add the tea bag and diced red beet. Allow the tea and beet to steep in the water for five minutes. Remove the teabag and return the water to a boil. Stir in couscous, then cover pan and remove from heat. Let stand, covered, 5 minutes. Use a fork to fluff the couscous.

Bring water, granulated garlic, turmeric, salt, and 1 tablespoon oil to a boil in a 1-quart heavy saucepan. Stir in couscous, then cover pan and remove from heat. Let stand, covered, 5 minutes. Use a fork to fluff the couscous.
