The Original Gangster Breakfast Sandwich

Chef and owner of Nighthawk Restaurant, Jeremy Fall is making a hearty breakfast sandwich.
Ingredients for Maple Sage Sausage (8 4oz. patties)
  • 2 pounds ground pork
  • 1.5 tbs finely chopped fresh sage
  • .4 ounces Kosher salt by weight
  • 3 ounces chopped crispy bacon
  • 3 tbs red wine vinegar
  • 1 tbs brown sugar
  • ¾ tsp cayenne
  • ¾ teaspoon ground nutmeg
  • ½ tsp black pepper
  • ½ teaspoon Italian seasoning
Ingredients for Bacon Fat Mayo (Make 1 1/4 cups of mayo)
  • 1 cup mayo
  • 3.5 tablespoons rendered, cooled bacon fat
  • Mix mayo and bacon fat together well


Directions for Sausage

1. Add fresh sage, maple syrup, crispy bacon and salt to the ground pork
2. Mix brown sugar, cayenne, black pepper, ground nutmeg, Italian seasoning and Red wine vinegar together.
3. Add vinegar/spice mixture to the ground pork.
4. Mix well!
5. Form sausage into 4 oz. patties and cook in hot skillet until browned on both sides and cooked through.
