Southern Vegetarian Chili
- 4 garlic cloves chopped
- 1 lb soy-protein meat substitute
- 1 tsp. Cayenne pepper
- 3 T. hot Mexican chili pepper
- ½ tsp salt
- ½ tsp pepper
- 2-3 cans of kidney beans
- 1 large can chopped tomatoes
- 1 sm can of tomato paste
- 1 c water
Sauté onion and garlic in a little olive oil.
Add soy protein-meat substitute and cook.
Add cayenne pepper to taste, hot Mexican chili pepper, salt and pepper.
Add kidney beans, chopped tomatoes and tomato paste.
Add water and stir well.
Simmer on low heat for several hours.
Serve with a grilled cheese sandwich or crackers of your choice. Or southern cornbread!
Top with cilantro!
