Slow Cooker Chicken Tagine

Ingredients
  • Slow Cooker Chicken Tagine (Adapted from Recipe.com)
  • 2 large Onions, thinly sliced
  • 2 large Onions, thinly sliced
  • 4 large Carrots, peeled and thinly sliced
  • 1/2 cup of dried cranberries
  • 1/2 cup dried apricots, coarsely chopped
  • 2 cups chicken broth
  • 2 TBSP tomato paste
  • 2 TBSP lemon juice
  • 2 TBSP flour
  • 2 TSP salt
  • 1 TSP garlic powder
  • 1.5 TSP ground cumin
  • 1.5 TSP ground ginger
  • 1.5 TSP ground coriander
  • 1 TSP ground cinnamon
  • 3/4 TSP ground black pepper
  • 1 bay leaf

To Serve....

2 cups Pearl/ Regular Couscous, cooked

Toasted Pine Nuts, Cilantro for Garnish

Flat Bread

In a 6 qt slow cooker layer the chicken, onions, carrots, cranberries, and apricots.

In a medium bowl whisk remaining ingredients and then pour over the chicken.

Cook 5 hours on high heat or 8 hours on low. Once done, taste and adjust

seasoning. Serve over couscous and garnish with toasted pine nuts and coarsely

chopped cilantro, serve with flat bread.
