Perfect Crab Cakes

Get a recipe to whip up the perfect crab cake!
Perfect Crab Cakes
Ingredients for Crab Cakes:
  • 1 egg
  • 1 tsp chives
  • 3 Tbsp diced apple
  • 1/4 cup celery
  • 1/2 tsp garlic, minced
  • 4 Tbsp onion, minced
  • 1 Tbsp chopped parsley
  • 1/2 Tbsp Old Bay
  • 1 tsp Worcestershire
  • 1 tsp lemon zest
  • 2 tsp fresh lemon juice
  • 1/2 tsp tabasco
  • 2 1/2 Tbsp mayo
  • 1 tsp dijon mustard
  • 17 Tbsp bread crumbs, Panko or Ritz
  • 1 lb Jumb lump blue crabmeat
Ingredients for Red Cabbage Slaw:
  • 2 Tbsp clarified butter
  • 1 crab cake
  • 2 tbsp lemon remoulade
  • 1/8 cup red cabbage, shaved
  • 1/8 cup celery, thinly sliced
  • 2 slices of dill pickle, cut into round slices
  • 1/2 Tbsp cider viniagrette
Ingredients for Cider Viniagrette:
  • 1 oz sugar
  • 1/8 tsp salt
  • 2 tsp Dijon mustard
  • 4 oz cider vinegar
  • 4 oz olive oil
  • 1 pinch ground black pepper
Ingredients for Lemon Remoulade:
  • 2 cups Mayo
  • 1 oz Dijon mustard
  • 2 oz W. Grain mustard
  • 1/2 oz white wine vinegar
  • juice of 1 1/2 lemons
  • lemon zest of 1 1/2 lemons
  • 1/4 oz of tabasco
  • 1 oz chopped caper
  • 1 oz chopped cornichon
  • 1/2 oz shallot, brunoise
  • 1 scallion, sliced
  • 1/2 oz chopped parsley
  • 1/2 oz chopped tarragon
  • 1/2 tsp salt
  • 1 pinch cayenne pepper
  • 1 pinch white pepper


Directions for Crab Cakes:


  1. Combine all the ingredients except the crab and bread crumbs
  1. Mix all ingredients thoroughly
  1. Gently fold the crab meat and 5 tbsp bread crumbs into the mixed ingredients until just coated * do not overmix the crab and bread crumbs, you want to have large chunks of meat*
  1. On a sheet tray with parchment paper, place six, 3 inch diameter ring moulds
  1. Place 1 tablespoon of bread crumbs in each ring mould
  1. Divide the crab cake mix into the ring mold mould and compact them into the bread crumbs on the bottom
  1. Lastly sprinkle another Tablespoon of breadcrumbs on top of the molded crabcakes while still in the ring moulds
  1. Keep in the ring molds until ready to cook


Directions for Red Cabbage Slaw:


  1. Mix the shaved red cabbage, sliced celery, and dill pickle in a mixing bowl with the cider vinaigrette
  1. Mix thoroughly.
  1. Reserve until ready to serve


Directions for cider viniagrette:


  1. Combine all ingredients into a mixing bowl using a wire whisk
  1. Reserve until ready to serve


Directions for lemon remoulade:


  1. Combine all ingredients into a mixing bowl using a wire whisk
  1. Reserve until ready to serve
