Chocolate Mint Pudding Parfait
For the chocolate pudding layer:
2 really ripe avocados ¼ cup cocoa powder ½ cup maple syrup ½ tsp vanilla flavor 1 Vega Maca Chocolate bar
For the mint:
2 avocados 1 tsp mint extract ⅓ cup honey (or maple syrup) Directions
Cut avocado in half and remove the seed. Scoop out the inside of the avocado into a food processor. Add the maple syrup and cocoa and continue to blend together until it's all smooth. Refrigerate 30 min before serving.
In glass cylinder bowl/glass, layer chocolate layer, then mint layer, then repeat. Garnish with shaving of maca chocolate bar.
You can reserve ¼ cup of mint recipe from the pudding parfait, add 2 cups coconut milk and ¼ cup cacao nibs and blend, or you can make it from scratch if you're only making the shakes, without the pudding.
If Making From Scratch
1 avocado 1 tsp mint extract ¼ cup fresh mint leaves ¼ cup cacao nibs 1 Tbs honey 2 cups coconut milk (vanilla) 1 scoop French vanilla Vega One Powder Directions
