Parmesan Cups with Caesar Salad

Recommended Cookware for Parmesan Cups
  • 1 Non Stick Pan
  • 1 Non Stick Muffin Tin
  • 1 Ring Mold – Same size as muffin tin
Ingredients for Parmesan Cups
  • 1 cup Microplane Grated Parmesan
Ingredients for Caesar Salad
  • 3 cups Shredded Romaine Lettuce
  • 1-2 fl oz. Caesar Dressing
  • Black Pepper
  • Parmesan Grated
Additional Add-Ons
  • Avocado
  • Radish
  • Cherry Tomato
  • Crispy Onion
Ingredients for Dressing
  • 2 oz. Egg Yolk
  • 4 oz. Lemon Juice
  • 1/8 cup Dried Mustard
  • 4 each Garlic Confit Cloves
  • 4 each Garlic Cloves Raw
  • 3 oz. Water
  • 4 cups Neutral Oil
  • 2 oz. EVOO
  • 1 cup Grated Grana Padano
  • 1 tbsp. Black Pepper

Directions for Parmesan Cups

1. Place pan on the stove over medium heat.
2. Place ring mold on the pan.
3. Spike 2 tbsp. of Parmesan into the ring mold and allow to melt.
4. Once melted, remove the ring mold and carefully slide the Parmesan disk onto the muffin tin.
5. This will make a Parmesan cup.

Directions for the Dressing

1. Combine lemon juice, garlic, water and mustard.
2. Blend.
3. Slowly add oil.
4. Season to taste.
5. Add grated cheese.
