Mango Pie

Chef Babette Davis is baking a delicious pie with mangos and cashews.
Ingredients for Pie
  • Cashews
  • Lemons (1 large)
  • Organic coconut milk in the can (or any non-dairy milk)
  • 2 fresh mangos (or 1 8oz frozen bag)
  • Agave nectar
  • Sea salt
  • Coconut oil
  • Granola (bag)
  • Non-stick oil spray
  • Organic dried mango (1 bags)
  • Walnuts (1 bag)
Ingredients for Crust
  • 1 cup granola
  • 1 cup walnuts
  • 1 tbsp. coconut oil
  • 2 tbsp. agave
  • 2 tbsp. lemon juice
  • ½ tsp sea salt
Ingredients for Mango Pie Filling
  • 1 cup non dairy milk
  • ¾ cup agave
  • 2 tbsp lemon juice
  • 1 cup organic dried mango (soaked until soft)
  • 1 cup frozen or 2 fresh mangos
  • ¼ cup coconut oil
  • 1 tsp sea salt
  • 2 ½ cups soaked and rinsed cashews

Directions for Crust

Process (on pulse) the granola, walnuts and sea salt until grainy. Add agave, coconut oil and lemon juice, leaving the mixture slightly grainy. Add crust to the bottom and sides of the 9” pie dish.

Directions for Filling

Add all liquids to the blender first and then add all other ingredients. Combine in a high-speed blender and blend until smooth and creamy.

Directions for Assembly

Spray the pie pan with non-stick oil spray. Firmly shape the crust to the pie pan. Add mango mix and diced mango. Place in the freezer until firm. Garnish with fresh mango if desired.
