cherry tomato, cucumber, olives, bell peppers, mushroom slices

Brown rice, quinoa
(Or Bulgar wheat )
Protein
Cubed baked tofu, brown beans such as black, pinto or edamame
Greens
Baby kale, baby spinach, arugula, etc
Toppings
Croutons, seeds and nuts
