Ken Wingard's Kale Waldorf Salad
- 4 celery stalks, chopped
- 2 Granny Smith apples, cored and cut into ½" cubes
- 1 cup seedless grapes, halved
- ½ cup reduced-fat sour cream
- ½ cup lowfat plain yogurt
- ¼ cup golden raisins
- ¼ chopped walnuts
- 1 tbsp honey
- 2 tsp lemon juice
- 4 cups kale, rolled and cut into ¼" strips
- Toss all ingredients together.
- Chill if desired.
