Ken Wingard's Kale Waldorf Salad
Ingredients:
  • 4 celery stalks, chopped
  • 2 Granny Smith apples, cored and cut into ½" cubes
  • 1 cup seedless grapes, halved
  • ½ cup reduced-fat sour cream
  • ½ cup lowfat plain yogurt
  • ¼ cup golden raisins
  • ¼ chopped walnuts
  • 1 tbsp honey
  • 2 tsp lemon juice
  • 4 cups kale, rolled and cut into ¼" strips

Recipe:

  1. Toss all ingredients together.
  2. Chill if desired.
  3. Serve.
