Making the Rub for the Ribs
• 3lb Slab Pork Spare Ribs
• ¾ Cup Light Brown Sugar • 3 Tbs Ground Mustard • 2 Tsp Cayenne Pepper • 1 ½ Tsp Smoked Paprika • 1 ½ Tsp Garlic Powder • 1 ½ Tsp Onion Powder • 1 ½ Tsp Kosher Salt • 1 Tsp Black Pepper
Recipe:

  1. Mix all ingredients in a bowl.
  2. Place ribs in a large baking dish.
  3. Rub the ribs down with the spice mixture and cover the dish and place in the fridge for at least 1 hour.
  4. Allow ribs to stand at room temperature for 20min before grilling.


Making the Kansas City Style BBQ Sauce
• 2 Cups Ketchup
• 1 Cup Water • ½ Cup Cider Vinegar • ½ Onion, finely sliced • 8 Tbsp Brown Sugar • 2 Tbsp White Sugar • 1 ½ Tbsp Fresh Lemon Juice • 1 Tbsp Worcestershire Sauce • ½ Tbsp Black Pepper • ½ Tbsp Ground Mustard
Recipe:

  1. Combine all ingredients in a saucepan and bring to a boil, reduce and simmer gently until thick and smooth, about 1 ½ hours.
  2. Stir occasionally to prevent burning.
