Julie Benz’s Turkey Pumpkin Chili
Ingredients:
  • 1 small yellow onion, chopped
  • 1 green bell pepper, chopped
  • 2 garlic cloves, chopped
  • 2 jalapenos, chopped
  • 1 lb. ground all white meat turkey 
  • 1 (14.5 oz) can of diced tomatoes with liquid
  • 1 (15 oz) can of pumpkin puree
  • 1 1/2 cup water 
  • 1 tbsp. chili powder
  • 1 tsp. ground cumin 
  • 1 (15 oz) rinsed/drained kidney beans


Directions:


  1. Heat oil in large pot over medium high heat

  2. Add onion, bell pepper, jalapeño & garlic. Cook for approximately 5 minutes.

  3. Add turkey and cook until browned (about 8 minutes)

  4. Add tomatoes, pumpkin, water, chili powder, cumin, 1 tbsp. salt and 1/4 tsp. pepper and bring to a boil

  5. reduce the heat to medium low and add beans

  6. Cover and simmer for 30 min.


Makes: 4-6 servings Prep time: 10 min. Cook time: 48 min
