Heart Healthy French Toast, Pomegranate Mimosa
Ingredients:
  • 6 Pieces of whole wheat bread, Cut with a heart-shaped mold or scissors
  • 3 Whole Eggs + 3 Egg Whites
  • 1½ Cups of Low-Fat milk
  • 2 Teaspoons Of vanilla Extract
  • Zest Of One Orange
  • 2 Teaspoons of Cinnamon
  • 8 oz. of Good Quality Dark Chocolate 70% or more
  • 1 Banana, Sliced medium on a bias
  • Blackberries, halved
  • Strawberries, cored and quartered
  • Agave Nectar in a squeeze bottle
  • Cooking Spray

Recipe
1. Pre-Heat an electric griddle to medium

2. Set a non plastic bowl over a gently simmering pot of water (double boiler)

3. Cut the bread into the shape of a heart

4. Chop the chocolate bar into small chunks

5. Add the chocolate to the bowl and gently melt the chocolate, stirring often

6. Beat the eggs together in a medium Pyrex, beat in the milk, vanilla, zest and cinnamon

7. Dip the Bread Hearts in the mixture and allow them to sit for about 30 seconds per side

8. Place on top of the griddle and cook until nice and golden brown, about 2 minutes per side

Assembly
Place three pieces of toast per plate, top with an assortment of the fruit, drizzle the chocolate and agave nectar over the top and enjoy right away
