Fish and Chips

Fish:
  • 1 ½ Pounds of Cod cut into pieces
Ingredients for the wet mixture:
  • 1/3 Cup Mayonnaise
  • 1/4 Cup Crème Fraiche
  • 1 Tbsp Chopped Shallot
  • 2 Tbsp Chopped Cornichons
  • 2 Tsp Chopped Capers
  • 2 ½ Tsp Dijon
  • ½ Tsp Old Bay
  • 1 ½ Tsp Champagne Vinegar
  • 2 Tsp Lemon Juice
  • Salt To Taste
  • 1 Tsp Parsley Chopped Fine
  • 1 Tsp Chives Chopped Fine
  • ½ Tsp Dill Chopped Fine
Ingredients for the batter:
  • ½ Cup Wondra Flour
  • 2 oz Pilsner Beer
  • 1/2 oz Vodka
  • 1 Tbsp Dijon
  • ½ Tsp Baking Powder
  • 2 oz Soda Water
  • ½ Egg Whisked
  • 1 ½ Tbsp Dill
  • 1 ½ Tbsp Parsley
  • 1 ½ Tbsp Chives
Ingredients for french fries:
  • 3 Large Russet Potatoes


Directions for the fish and wet mixture:


  1. Mix all ingredients (except fish) and let marry for three hours
  1. Dredge fish in Wondra flour/batter mixture
  1. Dip pieces into wet mixture
  1. Fry for 3-5 minutes at 350 degrees. Serve immediately.


Directions for french fries:


  1. Cut 3 large russet potatoes into ¾ in strips and blanch in well salted water until almost cooked through.
  1. Remove from water and allow to cool.
  1. Then fry at 280 degrees for 8 minutes until pal in color and holding their shape well.
  1. To finish fry at 330 degrees for 3 minutes.
