El Diablo Cocktail
- 2 ounces tequila reposado
- 3⁄4 ounce fresh squeezed lemon juice
- 3⁄4 ounce ginger syrup (*recipe below)
- club soda
- Candied ginger for garnish
Shake tequila, lemon juice, ginger syrup and crème de cassis with ice in a cocktail shaker. Strain into a Collins glass over fresh ice. Top with soda and garnish with candied ginger.
Ginger Syrup Recipe
To make the ginger syrup peel a couple chunks of fresh ginger and push them through a juice extractor (you can also get ginger juice from any local juice bar). Then mix equal parts of that liquid with white granulated sugar, making sure it dissolves before use. No need to heat up the liquid; in fact, doing so will destroy the natural spice flavor.
