Directions for Steak
Coat each of the steaks with chile rub about 3-4 hours prior to cooking. About 20 minutes prior to cooking; Remove the steaks from the refrigerator. This will help with cooking the steaks evenly. Heat a Cast Iron pan over high heat on the stove. Place the steaks on a baking sheet and drizzle with canola oil. Generously season both sides of the steaks with Kosher salt and ground black pepper. Form the raw steaks by pushing the sides in towards the center so they are as thick as possible. When the pan is hot, place the steak into the pan and allow to cook over high heat for 4 minutes. Flip the Steaks and allow to cook on the other side for an additional 4 minutes. . When the steaks are at desired temperature coat each side of the steaks with additional chile rub. Remove the steaks from the pan about 3-4 degrees below where you want them and allow the steaks to ‘rest’
Using a meat thermometer, place the probe into the thickest part of the steak. For rare, you should remove the steaks from cooking at 105, increase that temp by 8 degrees for every temperature up from rare. For example Medium would be 120/121 degrees
Directions for Chili Rub
Add all of the ingredients to a medium size pot and cook over low-medium heat for 20 minutes. When cooked allow to cool for 20-30 minutes prior to blending, pulse in a blender 4-5 times to blend this together. Chill before suing.
Directions for Grilled Onions and Jalapenos
Season the Onion slices, jalapenos with salt and pepper and canola oil. Place them into the hot grill pan for 6 minutes. Place onto a preheated oven 350 degree oven and allow to cook for 10 minutes until soft.
