Chef Marcela Valladolid's Pineapple-Vanilla Agua Fresca
- 2 cups roughly peeled, cored, and chopped fresh pineapple
- 2 cups water
- ½ teaspoon vanilla extract
- 3 tablespoons sugar, or to taste
- Put the pineapple, water, vanilla, and sugar in a blender.
- Process until smooth.
- Strain into a pitcher, pressing on solids, to extract all the liquid.
- Discard solids.
- Check flavor, adding more sugar if necessary.
- Serve over ice or chilled.
