Chef Marcela Valladolid's Pineapple-Vanilla Agua Fresca
Ingredients:
  • 2 cups roughly peeled, cored, and chopped fresh pineapple
  • 2 cups water
  • ½ teaspoon vanilla extract
  • 3 tablespoons sugar, or to taste

Recipe:

  1. Put the pineapple, water, vanilla, and sugar in a blender.
  1. Process until smooth.
  1. Strain into a pitcher, pressing on solids, to extract all the liquid.
  1. Discard solids.
  1. Check flavor, adding more sugar if necessary.
  1. Serve over ice or chilled.
