BBQ Chicken Tortizza

Make a healthy version of pizza with tortillas and roasted sweet potatoes!
BBQ Chicken Tortizza
Ingredients:
  • 2 large tortillas (i used a sun-dried tomato & basil tortilla)
  • 2 medium-large sized sweet potatoes
  • 1 cup BBQ sauce (I used organicville brand from whole foods)
  • 1 cup sliced red onions
  • 1 cup sliced red bell peppers
  • 1 cup clamshell gourmet mushrooms (can use your favorite mushroom)
  • 2 slices of gardien chickn strips (cut in cubes) optional
  • some chopped cilantro (as much or little as you like, or not at all if you don't like cilantro)


Directions:


  1. Roast sweet potatoes (depending on size 20-40 minutes)
  1. Mash sweet potatoes
  1. Coat one tortilla with sweet potatoes mash, then top with the second
  1. Spread BBQ sauce all over the top of the tortilla (making sure to coat the edges so they don't curl up when baking later)
  1. Add red onions
  1. Add mushrooms
  1. Bell peppers
  1. Add chicken
  1. Add cilantro
  1. Bake at 400 degrees for about 10 minutes till pizza is heated through
