America’s Test Kitchen Energy Bars

Ingredients:
  • 1 cup pitted dates
  • ¼ cup sunflower seeds
  • ¾ cup whole raw almonds
  • 2 brazil nuts (selenium)
  • ¾ cup dried apricots
  • 2 tbsp organic coconut oil
  • 2 tbsp chia seeds

Recipe:

  1. Mix with a food processor for about 2 min.
  2. Spread onto baking dish lined w/parchment paper.
  3. Firmly compress, chill 20 min.
  4. Cut into 3" squares.

*For variety, add cocoa powder or cinnamon
