How to Filet a Fish

Chef and partner at “Twenty Eight” restaurant, Shirley Chung is in the kitchen giving you proper tips on how to fillet a fish. She advises you to always store your fish sitting upright. When slicing it, make a long and shallow cut in the spine, then flip the fish over before removing the filet entirely. Today, she is using a white fish, which she will pair with a coconut curry.
