Pumpkin pie spice gives these Italian waffle cookies a nice autumnal flavor.

3-1/2 cups flour, sifted
2/3 cup ground pecans
2 teaspoons baking powder
1 teaspoon pumpkin pie spice
6 large eggs
1-1/3 cups sugar
1 cup (2 sticks) unsalted butter, melted and cooled
2 teaspoons vanilla extract
1.Preheat a pizzelle iron (for a stovetop version, set it over medium-high heat for 5 to 10 minutes). Lightly coat with cooking spray.
2.In a large bowl, blend together the flour, pecans, baking powder and pumpkin pie spice. In a separate bowl, beat the eggs with the sugar, melted butter and vanilla, beating until the sugar is dissolved.
3.Make a well in the center of the flour mixture. Pour the egg mixture into the flour and mix until smooth.
4.Spoon the batter by tablespoon onto the preheated iron and spread out with a heat-resistant spatula. Close the lid and bake for 30 seconds (turning the iron halfway if you have a stovetop iron) or until cooked through and lightly browned. Carefully remove the pizzelles and stack on a parchment-lined baking sheet.
Makes 5 dozen pizzelle.
