Apple & Goat Cheese Salad with Honey-Lime Dressing
If you’re not a big fan of watercress (it can be quite pungent), use shredded romaine lettuce instead.

INGREDIENTS
1/3 cup lime juice (about 3 limes)
3 tablespoons honey
5 teaspoons walnut or extra-virgin olive oil
1/2 teaspoon salt
1/4 teaspoon pepper
2 red and 2 green apples (about 2 pounds), cut into thin wedges
6 cups watercress (about 2 bunches, thick stems discarded)
6 ounces mild goat cheese, crumbled
1/2 cup walnuts, toasted and coarsely chopped
INSTRUCTIONS
1.In a large bowl, whisk together the lime juice, honey, walnut oil, salt and pepper. Add the apples and toss well to coat. Add the watercress and toss again.
2.Arrange the greens and apples on salad plates and sprinkle the goat cheese and walnuts on top.
Makes 6 servings.
