Chicken Packets with Smoked Mozzarella

Here’s a low-carb (only 8 grams of net carbs per serving), and relatively low-cal (254), dish that also is easy to clean up since the chicken is cooked in a foil packet. COOK’S NOTE: If you can’t find smoked mozzarella, or are not a fan, substitute sharp cheddar cheese.
Total Time: 1 hour
Hands Time: 40 minutes
1 tablespoon olive oil
1 large red onion, slivered
1 large red bell pepper, slivered
3 large carrots, shredded
6 cloves garlic, thinly sliced
1/4 cup water
1 teaspoon thyme
1 tablespoon flour
6 skinless, boneless chicken cutlets (4 ounces each)
1 cup shredded smoked mozzarella cheese (4 ounces)
1. In a large nonstick skillet, heat the oil over medium heat. Add the onion, bell pepper, carrots, garlic, water and thyme. Stir to combine. Cover and cook, stirring occasionally, until the vegetables are softened, about 7 minutes.
2. Remove from the heat. Sprinkle the vegetables with the flour, 1 teaspoon salt and 1/2 teaspoon black pepper, and toss to combine. 3. Preheat the oven to 350°F. Tear off six 16-inch lengths of foil. Dividing evenly, mound the vegetable mixture in the center of each piece of foil. Top with the chicken. Season lightly with salt and pepper. Sprinkle the cheese over the chicken.
4. Fold the foil up and seal. Place the packets on a large baking sheet and bake for 20 minutes or until the chicken is cooked through. Serve straight out of the packets, or open and carefully transfer the chicken and vegetables to serving plates.
